Maple Glazed Salmon

 

In January 2018 I stopped eating meat and turned into a full-time pescatarian. Since then I’ve probably eaten & cooked salmon at least a million different ways. One of my favorite recipes (probably because it’s super quick) is maple glazed salmon. It literally takes less than 30 minutes to prepare and always turns out great. I usually like to make this on a Sunday night and use it as my meal prep for the week.


Ingredients:

  • 1/4 cup maple syrup

  • 1 tablespoon brown sugar

  • 1 tablespoon soy sauce

  • 2 squeezes of lemon juice

  • 1lb of salmon

  • Your choice of seasoning


Directions:

  1. Season

Pre-heat your oven to 400°F. Place your salmon in a greased baking dish and season it as you normally would, then set it aside. I typically use lemon juice, fresh garlic, old bay, sea salt, black pepper and creole seasoning.


2. Mix

Combine the soy sauce, brown sugar, lemon juice and syrup in a measuring cup and stir until the mixture is smooth.

Side note:

I always use asparagus as my side dish when cooking salmon. This is not apart of the recipe, but feel free to throw a few pieces in your baking dish as well if you have any.

3. Marinate

Slowly pour the maple glaze over the salmon and use a basting brush to make sure it’s all fully covered. Allow it to marinate anywhere from 20 mins-2 hours. How long you choose is totally up to you, either way it will still turn out great!


4. Bake

Allow the salmon to bake for 15-20 mins or until it reaches your preferred temperature and you’re done!
